How to Make One-Pot Vegetable Pulao

What is Pulao?

Pulao is a rice cooked with vegetable and spices. This amazing, aromatic rice delicacy is very comforting to mind and nutritive to the body. This recipe helps to calm down vata due to its grounding and nurturing effect.

Nutritional Benefits:

White basmati rice is easy to digest and boosts sattva creating clarity and increasing awareness to the mind. The vegetables such as carrots, beans, potatoes, corn, peas, onion, ginger, garlic, and tomato bring various flavors such as sweet, astringent, bitter, pungent, and sour. Adding salt to the recipe makes this recipe a perfectly balanced one-pot meal full of all six tastes.

As per Ayurveda, each meal should have all six tastes to best nourish the mind and body. The spices such as cumin, cardamom, cinnamon, bay leaves, star anise make the rice fragrant and boost agni (digestive fire). The vegetable pulao served with ghee and raita (a condiment made of yogurt) is a perfect meal for strengthening all tissues.
